Westview Pie Bread Baked French Toast (12 servings) Ingredients: 3 cups skim milk 8 eggs, lightly beaten (can substitute equal amount of Egg Beaters) 1/3 cup brown sugar 1 ½ teaspoons vanilla extract ¼ teaspoon salt 1 loaf Westview Orchards Apple Pie Bread, cubed 1 cup chopped dried apples ½ cup raisins (optional) 1 ½ teaspoons ground cinnamon ½ teaspoon ground nutmeg 1 tablespoon confectioner’s sugar Preparation: Whisk together eggs, sugar, vanilla, milk, salt, cinnamon, and nutmeg in a large bowl. Toss together bread cubes, dried apples, and raisins, and transfer to a 9 x 13 inch baking pan coated with cooking spray. Evenly pour the milk mixture over the bread and fruit. Press bread cubes down with the back of a spoon to ensure it is evenly moist. Cover with foil and refrigerate for at least 8 hours. Preheat oven to 350 degrees. Bake the covered casserole for 40 minutes. Uncover and continue baking until puffed, set and lightly browned, about 20 minutes more. Let stand for 10 minutes; dust with confectioner’s sugar and serve. Variations: Other kinds of pie bread and dried fruit can be substituted.
